    Isla Cafe is fortunate to offer you Robusta coffee from the Central state of Mexico. This coffee hails from the state of Puebla. It is grown along the Sierra Negra nearest village is Santa Cruz, Huirzmalco, Ajalpan. This Robusta coffee is processed through a Carbonic Maceration. The ripe coffee cherries are washed and placed in a air tight container. Carbon Dioxide is introduced to control the fermentation of the sugars. This in turn gives the coffee a bright, red fruit taste.  Robusta coffee is known for its distinct taste and elevated levels of caffeine. Most of our customers use this to make their espresso blends.
